Now if you have a bunch of veggies you would like to cook on the grill but don't have any skewers (wooden or otherwise)? Fear not! There is a way that actually I prefer. All you need is some foil and you can cook up some extra tasty veggie packets.
We've done these maily with potatos and onions but as with most everything else you can use whatever veggies that you either have or want. Veggie packets are ultra easy to prepare. Frist you thickly chop whatever veggie you're planning on using. Then on a piece of foil, spray some non-stick spray on the foil. Then you add your veggies and seasoning. We've been using, Colonel Lee's cajun seasoning (hard to find but oh so tasty), bacon bits (artifical bacon bits of course) and parsley. Of course you can mix and match any seasonings you like.
Once you've got the veggies and the seasoning on the foil, close the foil up to make a packet. Now they're ready for the grill. The best thing about these packets is that they can cook right next to meat and you don't have to worry about cross contamination.
How do you tell if they're done? Well that can be a little tricky. I tend to let the cook ten or ffitenn minutes then I start with the fork test, if the fork goes into the veggies and the potatos feel soft, then they're probably done.
This is another dish that you should make more than what you think because once people get a whiff of your grilled veggies, they'll want to have some.
