You got your burgers and you got your dogs for the cookout. Now you should probably have some vegetables since they're both good for you and vegans seem to like them. How do you cook veggies on the grill? It's easier than you think. Shish-ka-bobs are just about the easiest way to grill veggies. Be sure to make plenty of these because they're popular with everyone.
The veggies we usually use are broccoli, bell peppers of every color, cherry tomatos, onions, zucchini and yellow squash. You can pretty much pick and choose your favorite veggies for this just make sure they'll hang on to the skewer. Once you've decided on your veggies you want to pick out a marinade. There is a very wide variety of marinades out there and most of them are vegan just be sure to read the labels. You don't want to actually marinate the veggies because some of them like the broccoli soak up too much flavor and it becomes overpowering. Keep the marinate on the side and bush it on as the veggies cook.
Now the prep. The veggies you'll want to chop them fairly thick because thinly cut veggies tend to fall off the skewers. The you take a skewer and fill it up with veggies.
Once you either run out of veggies or skewers you're ready to go to the grill. Basically you just grill these guys up, brushing on your favorite marinade as they cook. You gotta keep an eye on the veggies because they'll go from uncooked to brunt prety quick.
A word of caution. If you choose to use cherry tomatoes, you have to be careful because once they get close to done they start to lose their grip on the skewer.
A word about the skewers. If you use wooden skewers you may be told to soak them overnight in water so they won't burn. While you can do that with no adverse side effects, we have never done that and haven't had a problem with burning wood.
