Carrot Cake

Denise got this recipe from Deborah at Vegsource. Carrot cake is one of those snacks that I don't really crave, unless they're right in front of me, then I wolf it down. This recipe turns out pretty well and it's pretty darn scrumptious as well.


Ingredients

Grease and flour 10" X 9" square cake pan.

Sitr together dry indredients. Mix in carrots, egg subs, oil and vanilla.

Beat about 2 to 3 minutes, until well mixed. Stir in nuts and raisins.

Bake at 325° for about 40 - 50 minutes, or until a toothpick comes out clean.

Cool on wire rack and frost.
