Dr. John's Spuds

This was one of Denise's brainstorms. A local restaurant, Farah's, makes a dish called...well, Dr. John's Spuds. They're really good and one night we decided to see if we couldn't duplicate them....you can probably guess how they turned out....
Ingredients:

You can do one of two things here. You can either fry up the potato slices, like they do at Farah's or your can bake the potatoes for a lower fat dish. We baked the potatoes at 400° for 15 mins then flipped them over then we baked them for about 5 - 10 more minutes checking them often so they were soft yet a tad crispy.

While the potates are cooking make the cheese sauce.

Cheese Sauce:

Combine dry ingredients in a saucepan. Add water. Whisk constantly over medium heat until it is thick and bubbly. Remove from heat and add margarine. Stir until margarine is melted

When everything is done arrange a layer of potatoes on a large platter. Toss on some jalapenos and onion and smother in cheese sauce. Do another layer of potatoes and jalapenos and onions...repeat 'till you are out of potatoes.
