Chicken Fajitas

Okay, so it's not real chicken but Denise ran across a new faux-chicken and decided to give it a try. Harvest Direct Chicken Strips. While they are not entirely unlike chicken, they're actually pretty tasty in their own right. We also didn't have any fajita seasoning so we just winged it. We were pretty happy with the results, so if you're feeling saucy, give them a try.

Ingredients

Hydrate the chicken strips as per directions. Take some of the chopped onion and the all the chopped red pepper and start to sautee in a frying pan. Add seasoning while sauteeing. When onions and red peppers are almost done, add the re-hydrated chicken strips. Add a little more seasoning. When chicken strips are well mixed with the onions, peppers and seasoning, remove from pan and set aside.

In the still hot pan, add the strips of red pepper and zucchini and sautee with plenty of seasoning. Keep a close eye on the zucchini, it will get real done real quick. It shouldn't take more than a few mins to be ready.

When the pepper and zucchini mix is done, remove from pan and set aside with chicken mixture. You are now almost ready to eat!! Empty the refried beans into whatever you are planning on heating them up in and heat them up. Heat up a couple tortillas and you are ready to assemble your fajita!!

Now I'm not going to give instructions on how to assemble a fajita, suffice it to say, mine always look like a pregnant taco. But this is a really fun dinner to make so just have fun. You non-vegans can also get some cheese to add to the top.
