Mexican Pasta
This was inspired by the recipe sent to me by Marcia Hill. It originally came from a McDougall book, but I didn't like that too much. So we altered the recipe. Give it a try, it turned out really good.
Ingredients
- 4 cups cooked pasta (preferably macaroni style pasta)
- 1 onion chopped
- 1 carrot scrubbed and chopped
- 1 cup water
- 2 cans tomato sauce
- 1 Tbsp parsley flakes
- ¼ tsp dried basil
- ¼ tsp garlic powder
- 1 Tbsp soy sauce
- ½ tsp cumin
- 4 soft corn tortillas, torn into bite-sized pieces
- a pinch or two of crushed red pepper
- ½ bag of burger crumbles (fake hamburger)
Cook the onion and carrot in the water until the water is almost gone. Add everything else. Simmer unitl everything is nice and hot and serve.
