Oriental Green Beans

We got this recipe from "The Compassionate Cook or 'Please Don't Eat the Animals!" A Vegetarian Cookbook" by P.E.T.A. and Ingrid Newkirk, National Director of P.E.T.A. I honestly wasn't expecting them to be this good but they were!! I highly recommend these!

Heat the water in a wok or large saucepan. Carefully add the beans and steam until tender but crisp, about 8 minutes. Drain and set aside.

In a small bowl, combine the broth or water, soy sauce or tamari, rice wine or sherry, stirring dissolve the sugar.

Wipe the excess water from the wok or saucepan, add the oil and heat over medium-high heat.

Add the garlic and stir-fry for 1 minute. Add the beans and sauce, and cook for 2 minutes, stirring often.

Serves 4 to 6

Preparation time: 20 minutes.
