Sheppard's Pie

This is kind of a twist on the beef stew recipe. It turned out really well, altho the top didn't get golden brown.

Put all the chopped veggies in a big pot with just enough water to cover and start cooking. While the veggies are cooking re-hydrate the TVP and begin preparing the mashed potatos.

When veggies are almost done, turn off heat and drain. Make the gravy using either the water from the veggies or fresh water. Put the veggies back into the pot and add the gravy and TVP, mix throughly.

Using 2 smallish or 1 large casserole dish, put the contents of the pot (veggies and all) into the casserole dish(s). Leave about an inch or so between the top of the veggie mixture and the top of the dish. Add potatos on to the top of the veggie mix. Get a good solid, inch think layer on top. Pre-heat oven to 350 degrees.

Pop dish(es) into the oven and bake 30-45 mins, untill the surface is firm and a little browned. Bing! You're done!
