On a more personal note, I had almost resolved to giving up sharing the white cake that I love with Denise. none of the vegan recipes she had tried had produced good results, only succeding with chocolate. Then as she was about to give up Denise decided to try this recipe and WOW it blew me away! Altho it hasn't been tried on a full sized cake yet (at least by us) it makes TREMENDOUS cupcakes!
Ingredients:
1-1/2 cups flour
3/4 cup sugar
2 tsp baking powder
1/4 tsp salt
3/4 cup soy milk or other 'milk' (I used fat free rice milk)
2 tsp vanilla
1/4 cup melted shortening or oil (I used melted shortening)
1 egg sub, beaten (Ener-G egg replacer)
Preheat oven to 350 F. Grease a cake pan
In large bowl, mix together flour, sugar, baking powder, and salt.
Combine remaining ingredients, and add to flour mixture. Beat for 2 minutes.
Bake for 30 minutes (if using an 8 or 9 inch pan), 20 minutes (for cupcakes) or until a toothpick inserted in center of cake comes out dry.
