Another holiday favorite! This recipe comes from our friend Susan's sister, Cathy and lemme tell you they went fast at the dinner table. The original recipe calls for mashmallows but you can skip these since it's really hard to find vegan marshmallows.
Ingredients
Combine sugar, margarine, water, cinnamon and salt in skillet over medium high heat until sugar has dissolved.
Stir in apples and cook 3 - 4 minutes. Combine with yams and turn into casserole dish.
Bake @350° for 25 minutes. Add walnuts and cook for another 20 minutes.
If adding marshmallows, put them over the top and brown, approx. 5 minutes.
