Penne with vegan arriabiatta sauce

Note from Jim: I have no idea what Arriabiatta sauce is as I have never heard of it before. Since we haven't tried this recipe I can't vouch for it's taste but as they say, nothing ventured, nothing gained.

Preparation:

Heat oil and cook garlic just until softened, add remaining ingredients. Simmer over low heat and cook at least 3 hrs.

Add the cooked pasta and let it set 5 min. before serving.

That's the basic recipe, I like to personally add Gimmie Lean Sausage cooked and crumbled, Kalamata olives, roasted red peppers, marinated artichoke hearts and sauteed red onions.
