Venetian Barley Salad

Note: nonvegans can add smoked cheese

Process:

Cook barley (I used hulled) according to directions; this is where I add the salt Place cooked barley in bowl. Add other ingredients and mix add fresh basil last (I chop the basil) Refrigerate for a few hours before serving. It should be eaten cold.
